Abstract

Garlic, Allium sativum L., is broadly used around the world for its numerous culinary and medicinal uses. Laurus nobilis L. (Lauraceae) leaves are used on popular medicine as well as food flavoring and in the perfumery. The present study investigated the chemical compositions of Allium sativum L. bulbs and Laurus nobilis L. leaves. The plants were collected from Sétif region. Aqueous and methanol extracts were obtained by decoction and maceration respectivelly, the total phenolic and flavonoids contents were determined and  the antioxidante and antibactirial activities were evaluated. The results showed that all extracts contained a significant quantity of polyphenols. The methanolic extract of L. nobilis showed the highest antioxidante activity. Antibacterial activity was determined using three bacterial strains according to the disk diffusion assay; all extracts have no effect on the microorganisms tested.
