Abstract

Armoracia rusticana hairy roots biotransformation commonly used for food antioxidants like butylated hydroxytoluene and butylated hydroxyanisole to stilbenequinone. This biotransformation is mediated through peroxidases. Hairy root cultures of Armoracia rusticana are capable of biotransformation of BHT and BHA. Stilbenequinone formation is dependent on the age of the root culture and a major portion of it is secreted into surrounding medium.
